Why the hell would anyone even consider doing them?
You have literally zero to gain and all to lose!
Are there some serious nooks around that get caught out by these?
Does anyone have sympathy for a player who gets into a conversation and as soon as the word "trust" is muttered doesn't immediately block the player?
I really can't get my head around this stupidity.

Trust trades are just dumb in my opinion.

In my opinion, a person is trustworthy up to the point where they aren't. For instance, a common scamming method is to build up trust with someone over time by lending/borrowing items and giving them back. Then the last time the person asks to borrow something and scams it.
I don't trust anyone with anything that I can't stand to lose.

On another mmo i played a player who was considered highly trusted when doing world transfers and account trades for over two years without a hitch suddenly went nuts and kept everything. The amount of loot was truly staggering - equivelant to about 8 maxed out end game players with pro equips - in ch terms probably around 100-150 million gold+ not even counting the scammed accounts value.
It can happen to anyone at any time for a large variety of reasons.

These are ovious scams and only the less fortunate fall into these.
Why in the world would you trust a stranger with all your possessions?

Take a look and Google the Great Scam from EVE Online. Here is a excerpt from an article about it:
It's the story of a guy named "cally", who ran a corporation, a player-operated bank called "Eve Intergalactic Bank". Over the course of four months, hundreds of players deposited money in his bank, which offered interest, loans and insurance like every other ordinary bank. Except for the fact that one day, cally decided to grab all the money that was deposited and fly off to space with an alleged total sum of 790 billion Isk. In real life, this would translate to $170,000 - quite possibly the biggest MMO scam ever conducted.
Not only that, he also took the time to record a video in which he confesses his crimes, makes fun of the community, and reveals that he is a pirate, who once held the highest bounty in the game.
