What's your defence and armour and how should I upgrade it without go full Dex

I don't have too much experience, but when I was level 140 I found that with 1500-2000 defence I could dodge probably nearly 40% of attacks, with the occasional dodge spree and getting wasted spree. I don't know anything about armour and build at your level though, but then again, if you're using Riposte, you probably shouldn't dodge. I'm only assuming you're going high strength and regular dex though.
