Half survivability (or tanking) gear and half dps, in another way u can also go mostly vit and more dps gear, or mostly str and more tanking gear, if u cant find gear that u need (if its hardest to get useful tanking gear), use more vit for example and focus more on dps gear, it works nearly the same except that u have to use axe offhand and no pummel.

I got axe offhand and addy axe and my charm adds 30 vit and 225 hp so my warrior has around 3 k hp atm what is good i think for lvl 120 and aggy brace also adds str but as second brace i got energy brace. So shall i use 5 pierce race instead of it or something else and if smtg else what?

Aggy brace is better than the pierce, use it and then invest more pts in vit if needed.
