Teaweasel, From Arawn

You probably haven't heard of me. I keep a low profile. Don't post a lot. I'm not overly opinionated. I'm not called a total douche like 2x a week on forums. I barely argue with whiners. I try to be completely serious as much as possible.

In my RL..

I am 33. A chef, originally from NYC, recently moved to Seattle. And though I really miss the subways, night life and the NY Mets... I freaking love the Seattle weather, water and just general nice people. People here are so nice I feel like I have Personality Cancer.

The women are much hotter in NYC, but oh well, I may hafta marry a Fat Hipster from Seattle, but I can live with that. If she's nice.

Other than that.. I got the name Teaweasel from the Sony Online Entertainment random name generator in Everquest 1. Just clicked and up popped Teaweasel. I don't particularly care for weasels or tea, it's just a hilarious name, and totally original. No one else is named Teaweasel.

What kind of food do you enjoy cooking the most?
Italian. But Fine Dining Italian. Not like Chicken Parm, like Lamb Ragu Cavatelli..

Fine dining, yet comfort food in the same breath. I enjoy braising meat, pairing it with some creamy seasonal polenta, like chestnut in the winter, or spring onions in the..um spring. I like vinegary chutneys, mostardas, or pickles(pickling methods not actual pickles) to accompany or top the proteins. To cut thru the richness, and bring balance to the salt and fat.

That's the kind of food I get down on, but basically you put the time in to craft food, using preparations that are time tested, and timestaking, and then you bring them together and add love.
