There are three ways in helping N.Touch in being less interrupted and it's all to do with Dexterity:

1) Pump stats into Dex - To really feel the difference, you probably need 120 - 150 dexterity to greatly reduce the interruptions.
2) Purchase Golden Trident Lux - It provides 45 dexterity and 100 defence which is a total a 95 dexterity.
3) Secure Earthstone greaves and boots - Try to get Radiant for both of these, greaves: 500 defence & boots: 250 defence. (Best via far) If you are not able to, lesser or greater Earth Stone is viable too.

Note with all 3 options, you will still get interrupted but chances are you can successful heal once every 2 - 8 times depending on which road you go.

Lastly, only get dex if you are sure you are the type who solo lv and not a fully support druid.

You could also purchase an arcane orb at scavenger shop in Oworld. It regens your energy by 25 points per tick and gives damn good evasion boosts. If I remember correctly it cost 225k at scav. Shop. I've had pretty good success with it along with casting shield of bark and wards b4 attacking, I've seen tremendous reduction in interrupts. Good luck and good hunting!

Actually evasion boosts only really help avoiding the skills that interupt you, most of us get interupted by the Melee attacks of the mob's we face. Bark & Wards reduces DMG not interupts... Not disagreeing with your content, just it's focus.

Use Howling Wind, It lowers an attackers Attack Stat, which increases the chance it will fail the attack and miss you or you will dodge/parry...it doesn't need to be lvl'd up, I use it at lvl 1 but I cast vines, lightning, storm, wind and then wait till I am at 60% and start spamming touch, I usually get it off in 4 casts, but my DEX is like 70 (adjusted with trident)

I haven't tried this but I think would be amazing. I have the radiant boots and greaves which add 750 defence and looking to get trident which would add 190 defence and a total of 940 defence. Plus if I could find a radiant ring that adds 250 defence it would bring defense to 1190. Now add maxed howling wind and you would practically never be interrupted and the enemy would miss you constantly.

Sorta tangent to the OP's but does our melee attack interrupt our own casting?

Not sure if this is a lag issue or animation but I try to time my Touch right after getting hit, and I've seen it stop midway because my Druid hit the enemy.

Before update 3 you used to be able to perform a autoattack exploit and double-click the auto attack at key times to get an extra swing. I didn't even know about this until I saw my first duels in beta in CH and a few people were obviously exploiting it. OTM disabled this effect so people couldn't keep doing it. Was one of the funny, "beta douches helped us make a better game" moments.

You own attack shouldn't interupt you but I do try to cast after my attack lands, it maximizes your dps.

Yr attack does not interrupt your nature touch, it does however causes further delay but it really depends on what is your goal.
If yr running out of health soon and healing is priority, yr auto attack will initate when you get interrupted once and will continute to do so with every interruption. Hence delaying every potential sec of nature touch/embrace.
If you can afford to wait, it will be like TeaW whereby u cast N.T after a wack to maximizes yr damage output.
It can also be used as a breaking system to stop the constant interruptions. (Interrupted 3 times in a row, auto attack once, cast another spell and try to N.T again)

So yea, really depends on the situation. Like for me I always turn off auto attack when i am fighting fast attk mobs to get every sec possible on N.T
