why does apple take 30%?
The purchase is through iTunes and they support the app and IAP. It's kind of like a franchise for a company, they're not going to let them use stuff for free.

It's like leasing or renting a space to sell your wares if you have a shop, or if you're selling online through auction sites like eBay, they take a cut of the sale as well.
