Can someone tell me how often I should be looking for them to spawn?
They spawn around once every few months. So it isn't really worth to check em regularly. You just have to be lucky and find them.

You don't look for them, you farm for them. You have to kill *certain* regular mobs to make them spawn. That being said they are very rare and you might see one every few months.
